Here’s another popular and flavorful masala powder:

Meat and Curry Powder – Kerala Style (Approx. 1 kg)

Ingredients:

Coriander seeds – 300g

Cumin seeds – 150g

Dry red chillies – 200g

Black pepper – 100g

Cinnamon – 50g

Cloves – 30g

Cardamom – 20g

Turmeric powder – 50g

Garlic powder – 30g

Ginger powder – 30g

Curry leaves (dried) – 30g

Preparation Steps:

1. Dry roast all the spices (except turmeric, garlic powder, ginger powder) on a low flame until aromatic.


2. Let them cool completely.


3. Grind the roasted spices into a fine powder.


4. Add turmeric powder, garlic powder, ginger powder, and mix well.


5. Store in an airtight container.

Usage:

Use this masala for meat curries, stews, or gravy-based dishes. Add 2–3 tsp for 500g of meat for a rich flavor.
